These cookies are easy to make and turn out perfect every time! Plus this recipe makes a lot of cookies. Test it out once before you double it, otherwise you'll be making upwards of 5 batches!
Ingredients
- 1 cup softened butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 3/4 cups all-purpose flour
- 1 Tbsp baking soda
- 1/2 tsp salt
- 3 cups quick-cooking oats
- 1 cup chopped waltnuts (optional)
- 1 cup semi-sweet chocolate chips
Preheat oven to 325F
In a large bowl cream together the butter, brown sugar and white sugar, until smooth.
Beat in eggs, one at a time, then stir in vanilla.
Combine flour, baking soda and salt; stir into the creamed mixture until blended.
Mix in the quick-cooking oats, optional walnuts and chocolate chips.
Drop by heaping spoonfuls onto ungreased cookie sheets.
Bake for 12 minutes in preheated oven. Allow cookies to cool on cookie sheet for 5 minutes before removing and placing on wire racks to finish cooling.
*If you prefer chewy yet flat cookies, melt the butter.
If you prefer your cookies chunky and chewier just soften the butter, don't melt it
**Have fun with these cookies and add whatever you'd like. I've substituted rasins for the chocolate chips and they worked well. I'm thinking that crasisns (dried cranberries) and white chocolate could be very good too.

If you prefer chewy yet flat cookies, melt the butter.
If you prefer your cookies chunky and chewier just soften the butter, don't melt it. :)
