SERVES 8 -10
· 1 beef roast, of choice - approx 5-6 lb
· 2 packages onion soup mix
· 1 Litre of Coke
·
- Pre-heat oven to 400 degrees
- Put roast in a a roasting pan and sprinkle with onion soup mix.
- Add coke to almost cover the roast.
- Put the lid on the roasting pan and place pan in pre-heated 400 degree oven.
- Cook roast at 400 degrees for 30 minutes.
- Reduce heat to 350 degrees and cook for 2.5 hours (uncover for last 30 minutes)
- Remove roasting pan from oven and place roast on a platter and cover with aluminum foil. Let roast sit for 30-45 minutes before slicing!
- Liquid makes a great gravy!
I cooked a 12 pound roast last weekend with this recipe and no-one could believe I cooked it in Coke!
