Coca Cola Roast Beef

SERVES 8 -10

·         beef roast, of choice - approx 5-6 lb

·         2 packages onion soup mix

·        1 Litre of Coke

·        

  1. Pre-heat oven to 400 degrees 
  2. Put roast in a a roasting pan and sprinkle with onion soup mix.
  3. Add coke to almost cover the roast.
  4. Put the lid on the roasting pan and place pan in pre-heated 400 degree oven.
  5. Cook roast at 400 degrees for 30 minutes.
  6. Reduce heat to 350 degrees and cook for 2.5 hours (uncover for last 30 minutes)
  7. Remove roasting pan from oven and place roast on a platter and cover with aluminum foil.  Let roast sit for 30-45 minutes before slicing!
  8. Liquid makes a great gravy!

I cooked a 12 pound roast last weekend with this recipe and no-one could believe I cooked it in Coke!
