Debbie's Chicken (Cornflake Chicken)
Mix: 2 eggs
4 tbsp milk
Mix: 2 1/2 C crushed cornflakes
2 tsp salt
1/2 tsp pepper
5 tbsp butter (melted)
Dip pieces of chicken (we tend to use smaller chunks, but you could do a whole breast at once if you wanted) in the egg/milk mixture, then into the crushed cornflakes. Set in a well-greased casserole dish or baking pan. Drizzle with butter. Bake, uncovered at 350 degrees F for 60 minutes
** We always chop up a few potatoes, and an onion and throw it in the same dish with the chicken! Delicious! **
