Easy Pho Soup

Ingredients

* 4cups chicken broth

* 1 onion, thinly sliced

* 1tsp ginger

* 3 cloves garlic minced

* 2 tablespoons (fish sauce)

* 1 tsp cinnamon

1 tsp ground coriander

2 tsp dried cilantro (only because I couldnt find fresh)

Spicy chili sauce to taste.

1 tsp basil

8 ounces fresh bean sprouts

1 cup chopped Chinese cabbage

1 carrot, sliced into bits

1 package rice noodles

3 green onions, sliced

1/2 lb shrimp, cleaned and shelled

a block of tofu cubed

 

lime wedges

Directions

Combine chicken broth, fish sauce, and spices and cook for around an hour..

Soften the noodles by submerging them in boiling water off the stove for 10 minutes. or follow package directions.

I added the carrots and onion half way through.

Right before serving add the shrimp, tofu, cabbage and green onions.

Ladle into two large serving bowls on top of the soft drained noodles. Top with beansprouts.

Serve with fresh lime wedges.
