Rice Pudding
2 cups cooked rice (good way to use up leftover rice!)
approx. 3 cups milk (I used skim)
1/2 cup sugar
1/8 tsp salt
1 1/2 tsp vanilla
1/2 cup raisins (optional)
spices to taste (cinnamon, nutmeg, allspice, etc.)
Add all ingredients to the cooked rice except spices and bring to a boil. Boil for a few minutes and cook until most of the milk is absorbed. Once it is at desired consistenct, add spices.
