This recipe includes the cake recipe as well as a delicious spice icing.
For the cake:
1/2 C Crisco shortening/Earth Balance vegan butter
3/4 C lightly packed brown sugar
1/4 C white sugar
2 eggs
1 tsp vanilla
Cream with electric beaters on medium speed until light and fluffy
Add:
1 1/2 C All-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup non-dairy milk
Beat on low speed for 1 minute, then on medium speed for 2 minutes.
Add:
2 cups finely chopped apple (Fold in to mixture)
Spread evenly in a 9x9 square pan (a 9 inch round cake pan or budnt cake pan work well too.. just make sure you grease them well!!)
Bake at 350 degrees F for 35-45 minutes
Spicy Icing (mmm....)
1/2 C vegan butter
4 C sifted icing sugar
1/2 tsp cinnamon
1/4 tsp of nutmeg
1/4 C non-dairy milk (add a little bit at a time, as needed)
Beat until smooth.
Slather all the goodness onto the cake when cool.
