Ingredients
- 2 tablespoons minced fresh parsley (I haven't used this as I never have it on hand)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
- 1/3 cup grated Parmesan cheese
Directions
Take a look at this website on how to cube a butternut squash. I HIGHLY recommend microwaving it for 3 minutes. It makes it so much easier to peel and cube.
1. In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
2. Transfer to an ungreased shallow baking dish (I used a baking sheet). Sprinkle with parmesan and toss to coat.
3. Bake, uncovered at 400 degrees F for 50 - 55 minutes or until squash is just tender. Mine took less than 50 minutes, so keep an eye on it.
