Buckwheat Pancakes
Can be made vegan, gluten-free, and lactose-free ... for all of your dietary requirements!
Ingredients:
1 cup buckwheat flour (Sarassin)
1 cup milk (You can use almond, coconut, soy, rice, or any other milk to suit your needs!)
1 egg (You can omit this for an equally delicious vegan pancake)
Pinch of salt
*1/2 tsp cinnamon
*1 tsp vanilla
*1 ripe banana (mashed)
*1 tablespoon ground flax seed
*I use these, but they are optional! This recipe is extremely adaptable. Try with blueberries, strawberry jam, nuts, chocolate chips, or whatever else you have on hand!
Mix all ingredients in a bowl, and pour on hot griddle or frying pan. Flip when bubbles appear in middle of pancake, or when slightly brown.
