Super Yummy Lemony Bars of Goodness
Crust
- 1 cup butter, softened
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 1 tsp salt
Filling
- 4 eggs
- 1 1/2 cups white sugar
- 1/4 cup + 1 Tbsp all-purpose flour
- 2/3 cup juice squeezed from a lemon (approx. 2 large lemons) + 2 lemons, zested
Preheat oven to 350 degrees F
Butter a 9x13" pan and line bottom with parchment
Crust: In a medium bowl, blend together butter, white sugar, flour and salt. Press into bottom of pan. Back for 15-20 minutes or until firm and golden.
Filling: Whisk together sugar, flour, and lemon juice and lemon zest. Pour over baked crust. Bake for 20 minutes. Filling will set once cooled.
Glaze (optional)
- 1 cup icing sugar
- 3 Tbsp lemon juice
- 2 drops of food colouring
Pour glaze over bars as soon as they come out of the oven. Let cool.
